A better guide to jams …

It is often said that jam ... is too sweet!
That's normal!

To have the right to be called "jam", a product with a fruit base must contain at least 60% sugar. That is the law!

JAM is the result of cooking a mix of fruit and sugar.

JELLY is the same product obtained from simple fruit juices or concentrates.

The term MARMALADE is used only for products made from citrus fruit.

Nowadays, jams are preserved by means of :

- a minimum total sugar content of 60%,

- the product's own acidity,

- and, above all, heat treatment: pasteurisation.

All the jams sold on the market must abide by French regulations in accordance with European legislation.
