Mastery of the cooking

Andrésy Jams wanted to retain the principle and continue cooking its jams in cauldrons, in small quantities, by steam, to keep watch over the development and to control the quality of the product obtained.

Controlling the cooking is a stage of paramount importance which requires permanent supervision and considerable human expertise. We like to bring out the natural flavour of the preserved fruit slowly in hot cane sugar.
